In the debate between gas and electric ovens, many savvy cooks have sided with gas. Electric models definitely have their downsides. Not only will your electric oven run a higher bill than a gas model, an electric range can be less consistent than an even flame. Electric ranges also take time to change temperatures, where turning the dial on a gas range has immediate results.

This being said, electric models also have their advantages. While the heating coils might be bigger energy hogs, they're also more efficient at transferring heat to your cookware: for example, a pot of water will boil faster on an electric range compared to a gas range. Since most modern electric ranges have a smooth, flat surface, they're also much easier to clean as well.

The debate mainly focuses around rangetops, but electric ovens have quite a few advantages over gas ovens. Without convection helping it out, a gas oven will trend towards inconsistent heating. Electric ovens are not only more consistent, they also tend to offer more granularity compared to a gas oven.
