My roommates don't use my cast iron skillet.
It’s not that they're not allowed, or that they don’t understand its durable appeal. They know it delivers great flavor, it's completely oven-safe, and it has excellent heat retention abilities. It’s just that they, like many others, are under the impression that cast iron requires too much work.
After all, if you soak it, toss it in the dishwasher, or scrub it overzealously, it could easily lose its seasoning and rust.
Unless your pan is from Lodge’s new line of rust-resistant, pre-seasoned cookware, that is.
The line, available exclusively at Macy’s until the end of 2016, includes two skillets, a double-burner flat griddle, and a Dutch oven that have all been heat-treated to inhibit rusting. The process involves heating the iron in a special oven, which changes its molecular structure.
The results are pretty incredible: dishwasher-safe cast iron. It’s practically unheard of.
While we long-time users of traditional cast iron might balk at the idea of subjecting our flavorful skillets to the punishing jets of a dishwasher, Lodge’s heat-treated line may help introduce more newbies to the most versatile type of cookware in the world, and give busy cooks a break when it comes to cleanup.
