Some parts are plastic and the wand isn't the strongest feature, but it nails the basics like temperature and pressure. Stainless steel and ceramic cookware are good for a lot of things, but when it’s time to fry an egg, non-stick is the way to go, and the All-Clad HA1 set is our favorite. During testing, eggs slid around the pan effortlessly, even without oil. The saucepan lids trapped steam so well that it cooked some of the best rice in the group, and the skillets pulled off crispy chicken skin, a rare win for nonstick. The pans are a little bulky and don’t nest easily, but the performance, durability, and ease of use more than make up for it.
